  • 1 cup Basmati rice
  • ½ cup jaggery (gur), grated or chopped
  • 3-4 cups water
  • 4-5 green cardamom pods
  • 2 tablespoons ghee (clarified butter)
  • A handful of mixed nuts (cashews, almonds, raisins) – optional
  • Pinch of salt

Method of Cooking:

  1. Rinse the rice thoroughly and soak it in water for about 20 minutes.
  2. In a pan, heat ghee over medium heat. Add cardamom pods and let them sizzle for a few seconds.
  3. Drain the soaked rice and add it to the pan. Stir for 2-3 minutes until the rice gets coated with ghee.
  4. Pour water into the pan and add a pinch of salt. Bring it to a boil.
  5. Reduce the heat, cover the pan, and let it simmer for 12-15 minutes until the rice is almost cooked.
  6. Add grated jaggery to the rice. Stir gently and cover the pan again. Let it cook for another 5-7 minutes until the jaggery melts completely and blends with the rice.
  7. If using, roast the nuts in a separate pan with a teaspoon of ghee until golden brown and add them to the Gur Ke Chawal.
  8. Turn off the heat. Let it sit for a few minutes before serving.
