- 4-5 black peppercorns

Method of Cooking:
- Wash the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
- In a large mixing bowl, combine the chicken pieces, yogurt, ginger-garlic paste, half of the chopped coriander leaves, half of the chopped mint leaves, green chilies, turmeric powder, red chili powder, garam masala, and salt. Mix well, ensuring that the chicken is evenly coated with the marinade. Allow it to marinate for at least 30 minutes.
- In a deep-bottomed pan, heat ghee or vegetable oil over medium heat. Add the cumin seeds, cloves, cinnamon stick, cardamom pods, and black peppercorns. Sauté for a minute until the spices release their aroma.
- Add the thinly sliced onions to the pan and cook until they turn golden brown and caramelized.
- Add the marinated chicken to the pan and cook until it is partially cooked and the marinade has thickened, stirring occasionally. This should take about 10 minutes.
- In a separate large pot, bring water to a boil. Add the soaked and drained rice to the boiling water. Cook the rice until it is 70-80% cooked. It should still have a slight bite to it. Drain the rice and set aside.

- In a deep ovenproof dish, layer half of the partially cooked rice at the bottom. Top it with the cooked chicken mixture, spreading it evenly. Sprinkle the remaining chopped coriander leaves and mint leaves over the chicken layer.
- Layer the remaining rice on top of the chicken, spreading it evenly. If desired, dissolve a few saffron strands in a tablespoon of warm milk and drizzle it over the rice for an aromatic touch.
- Cover the dish tightly with foil or a lid and place it in the preheated oven. Bake for 25-30 minutes until the rice is fully cooked and the flavors have melded together.
- Remove from the oven and allow the biryani to rest for a few minutes. Garnish with fried onions and serve hot with raita or a side salad.
